Organized by MADA Collective kitchen and Garambullo Project within the framework of the Public Open Art Program for the exhibition Northern Nature, the Collective cooking session It is an invitation to expand our notion of food in semi-desert territories, landscapes that in the imagination have been presented to us as not being fertile enough to sustain a varied diet. Contrary to what you have told us about soils such as Pedregal or the semi-desert, we will understand new ways of experimenting with ingredients that are part of the traditional cuisine of the Queretaro semidesert while we live together, we prepare our tortillas, salads and sauces, using ingredients collected from the dining room Northern Nature and sharing a garambullo stew.
Harvesting cuisine in the Queretaro semi-desert, rooted in nomadic traditions, is connected to the heritage of the milpa, the basis of Mexican cuisine. It represents a solid resistance against land loss and food homogenization. These traditions defy the pressures of modernity and preserve the connection between people and their environment; in addition, it is a cuisine that testifies to the capacity of communities to resist the loss of their natural heritage while sustainably nourishing themselves from the earth.
